The Paisa Process

From seed, to harvest, to import, our process is rooted in tradition, transparency, and a deep respect for the land and the families who cultivate it.

We work hand-in-hand with those who work the land across Colombia, to bring you specialty coffees that are as meaningful as they are flavorful.

Our process beings at the farms.

We start by establishing a connection with our partner farmers—engaging in conversations, learning about their current practices, and tasting their coffee. At this stage, we offer feedback on the coffee and collaborate with them on any adjustments or improvements needed at the farm level.

Harvest

Harvest Season

Once the harvest begins, we purchase parchment coffee from our partner farmers at premium prices, above market rates. Throughout the harvest, we continue evaluating quality as batches are processed, ensuring the highest standards are maintained.

To support our farmers, we also provide advanced payments, giving them access to working capital early in the season. This helps them avoid unnecessary debt and provides much-needed cash flow during the processing period before the coffee is ready for sale.

Sort and Export

From Farms to Mill

After collecting the coffee, we transport the parchment from the farms to a mill in Medellín, where it is hulled, sorted, and packed for export. From there, the coffee is shipped to the port of Cartagena, loaded into containers, and sent by boat to the United States. Currently, all containers are shipped to the Port of Baltimore, though we plan to begin shipments to the West Coast soon.

Import

Once processed, our coffees are transported to the U.S. with care and efficiency.

Once the container clears customs, it is moved to our warehouse in Middle River, Maryland (RPM Warehouse). From there, we ship palletized orders to customers across the U.S. and Canada. Before any sale, we provide samples—green or roasted—based on our customers’ preferences, ensuring they can make informed decisions about the coffee they’re purchasing.

By managing the import process ourselves, we maintain quality control and ensure that the farmers receive fair compensation for their hard work.

Direct Access to Coffee Origin

We work directly with family-owned farms across Colombia. When you source from Paisa, you know exactly where—and who—your coffee comes from. Ask us about ways to collaborate on your coffee—from seed phase.
